“Jack Wax” Party Courtesy Ruth Esther Delavan, Delavan Farms, Cincinnatus, NY Makes about 4 servings Directions Boil 1 cup Pure NYS Maple Syrup in a 2-quart pot. Cook 5 minutes (to 232 degrees F). Meanwhile, pack a large bowl or flat pan with clean snow (or crushed ice). Set out forks and sour pickles. Drizzle hot syrup over snow or ice. Result – a chewy sweet treat call “Jack Wax” or Sugar on Snow. Grab a fork and twirl up a layer of wax. The sour pickle hones your taste so you can partake of more “Wax”. Sandwiches, hot coffee, cocoa and old-fashioned plain doughnuts complete a fun time experience. We served a Jack Wax party to a cousin’s family on Mothers’s Day. That pan of snow in the freezer was just what we needed for an impromptu party for youngsters and parent - Ruth Esther.
