Section 276.3 of the New York State Agriculture and Markets regulations states in part that "Home processed food...shall mean any food processed in a private home or residence using only the ordinary kitchen facilities of that home... but shall exclude potentially hazardous food…" Processors of home processed foods who sell or offer for sale such foods may be exempted from the licensing requirements of Article 20-C. Taking Stock and Looking Ahead: Benchmarking New York State Maple Sugar Production Cornell University Department of Natural Resources researchers have produced a statistical report of NY maple production, Taking Stock and Looking Ahead: Benchmarking New York State Maple Sugar Production. The data are broken out by size class (# taps) and by geographical district to characterize the diversity among NY State maple producers, as well as to facilitate comparisons among similarly positioned operations. The report is based on a detailed mail survey of NY maple producers and is part of Cornell's effort to support maple production and sustainable rural development in New York. The report was funded by the Cornell University Agricultural Experiment Station.
