New York State Maple Recipes and Nutrition Information

It is surprising that something that tastes as good as maple syrup also can help you meet your daily nutrition requirements.

Each ¼ cup of New York State maple syrup contains 7 percent calcium and 1 percent potassium. It also contains no fat or cholesterol. Maple syrup is low in sodium: 8 milligrams per ¼ cup. Maple syrup has no more calories than sugar. Both have both about 200 calories per ¼ cup.

NEW! Barbeque Maple Pulled Pork ala Glenora
1 each pork butt (about 7 pounds)
2 each chopped onion
2 each chopped carrots
3 stalks celery
2 each fresh tomatoes
1 Tablespoon  peppercorn
1 each bay leaf
1 Tablespoon dry thyme
2 teaspoons whole coriander
2 teaspoons ground cumin
1/8 teaspoon crushed red pepper
1 ea  juniper berry
1 cup  bourbon
¼ cup cider vinegar
¼ cup molasses
¼ cup  New York maple syrup
¼ cup Glenora Cabernet Sauvignon
1 each chipotle
2 cups  chicken stock
2 cups barbeques sauce

Grilled cleaned pork butts.  Caramelize onions, add carrots, and celery.  Add seasoning sweat for 2 minutes.  Add fresh tomatoes, bourbon and Glenora Cabernet Sauvignon simmer for 5-10 minutes.  Add vinegar, molasses and New York Maple syrup.  Place pork on top and cover braise in over at 325 degrees until fork tender.  Once braised remove pork and strain liquid.  To the strained liquid add 2 cups of chicken stock and 2 cups of Barbeque sauce.  Add pork back into the liquid and cook out for about half and hour.  Season with salt and pepper and serve. 


Hello! My name is Courtney Donnelly of DeKalb Junction, I was crowned New York State Maple Queen on May 20, 2006 at the American Maple Museum in Croghan. I am a third generation maple producer. I started out at my grandparent’s house Paul and Laura McAdam in Gouverneur using a flat pan fired with wood. I now help my mom, dad, and sister run the Orebed Sugar Shack. It is truly a family tradition though; there are three sugar bushes that are run in the family Bradley McAdam and family, Jennifer McAdam Rastley and family, and Grandma McAdam still operate in Gouverneur. Brent McAdam and family operate the Down Back Sugar Shack in Hermon.

Maple Milkshake
2 Scoops vanilla ice cream
1 Cup milk
½ Cup maple syrup
Place ingredients in blender and blend until well mixed or shake all ingredients thoroughly in a tightly covered container.  Enjoy!


Maple No Bake Cookie
2-Cups maple syrup
2-Cup crunchy peanut butter
1-Teaspoon salt
1-Teaspoon Vanilla
About 3 cups quick oatmeal
Cook maple syrup until it forms a soft ball when tested in a cup of cold water. Remove from heat and stir in the peanut butter, salt, vanilla, oleo, and oatmeal. Stir until quite cool and then drop by the spoonful on wax paper. Serve with a glass of cold milk.


I picked the following recipe up on the New York State Maple Tour on July 16. This came from Eileen Basham at B & B Maple
Maple Syrup Barbecue Chicken
16 oz. Wishbone Italian salad dressing
1 ½ cup maple syrup
½ small jar picante sauce
Dash garlic powder
Dash onion powder
Dash lemon-pepper
4 tablespoons orange marmalade
Dash Worcestershire sauce
Chicken for 10 to 12 people
Simmer in marinade for about a half hour then barbecue until chicken is done.


Maple Crunch Chicken

Melt ½ cup margarine in a pan in 350° oven. Beat 2 eggs with ¼ cup Pure New York State Maple Syrup. Dip chicken pieces in this sauce and then into instant oatmeal and salt. Place chicken in pan with margarine and bake until tender, turning 2-3 times.

Maple Blender French Dressing

1 cup ketchup
½ cup Pure New York State Maple Syrup
1 tsp.salt
¾ cup salad oil
¼ tsp. pepper
½ tsp. dry mustard
& frac12; tsp. powdered ginger

Cover and blend on high speed for 20 seconds. Makes 2 cups.

Maple Sour Cream Cake

1 egg
1 cup Pure New York State Maple Sugar
1 cup sour cream
1 tsp. vanilla
1-1/2 cups flour
1 tsp. baking soda
½ tsp. salt

Beat eggs thoroughly, add sugar and continue beating. Add sour cream alternately with flour, which has been mixed and sifted with baking soda and salt. Add flavoring, stir well and turn into greased 9" square pan. Bake at 350° F for 25-30 minutes. Serve plain or frosted.

Maple Sugar Kisses

1 cup Pure New York State Maple Sugar
½ cup brown sugar|
¼ tsp. cream of tartar
½ cup water
6 marshmallows
1 egg white

Boil sugars, water and cream of tarter in saucepan until mixture becomes brittle when dropped in cold water. Cut marshmallows into small pieces and add to mixture. Let stand 5 minutes until melted. Pour over stiffly beaten egg white. Beat until light. Drop from teaspoon onto wax paper. Garnish with candied cherry or pecan halves. Makes 30 kisses.

Rolled Maple Sugar Cookies

1 cup shortening
¾ cup Pure New York State Maple Sugar
1 cup white sugar
2 eggs, well beaten
2 tbsp. milk
4 cups flour
2 tsp. baking powder
½ tsp. salt
2 tsp. vanilla

Cream shortening with sugars. Add well-beaten eggs, milk and vanilla. Add flour, baking powder, and salt, sifted together. Mix and chill thoroughly. Roll out thin on floured board and cut with cookie cutter. Bake on greased cookie sheets in 350° F oven for 10 minutes. Makes 6 dozen 3 inch cookies.

Easy Refrigerator Sweet Rolls

2 cups warm water (110° to 115° F)
2 pkgs. Active dry yeast
½ cup sugar
2 tsp. salt
¼ cup shortening
1 egg
6-1/2 to 7 cups flour

Dissolve yeast in water ­ stir in sugar, salt, shortening and eggs. Mix in flour until dough is no longer sticky. Place in greased bowl, cover and place in refrigerator to rise. Dough can be kept refrigerated for up to 2 weeks. ­ about 2 hours before baking, remove from refrigerator and flatten our dough into a large rectangle. Brush dough with 2 Tbsp. Melted butter or margarine. Sprinkle with ½ cup Pure New York State Granulated Maple Sugar and ½ cup chopped walnuts. Roll dough jelly roll style and cut into 1-1/2" wide pieces and place cut ­side up in a greased pan. Cover and let rise for about 40 minutes. Bake at 350° for 15-20 minutes. When rolls come out of the oven, spread Pure New York State Maple Cream on top to frost.

Maple Cheesecake

8 oz. cream cheese-softened
8 oz. whipped topping
½ cup Pure New York State Maple Sugar
1 pre-made graham cracker pie crust

Mix all ingredients together and pour into pie crust. Let chill overnight. Sprinkle top with Pure New York State Maple Sugar before serving.

Helpful Hint: ¾ cup Pure New York State Maple Syrup equals 1 cup sugar. When substituting Pure New York State Maple Syrup for sugar, reduce liquid in recipe by 3 tablespoons for each cup of syrup used.
