Earl Parker tapping a tree with grandson (and 5th generation sugarmaker) Joshua Michael Parker, 2, in preparation for Maple Weekend on the Parker Family Maple Farm in West Chazy. Earl Parker transplanted this tree to his farm about 20 years ago. Well worth the wait! People in line to be seated at Cartwright's Maple Tree Inn pancake breakfast in Allegany County. The Maple Tree Inn served its first pancakes and maple syrup in 1963; and began the original maple operation in the 1850’s with seven small evaporators.
